Chocolate and mint are such a delicious combo, and especially perfect for the holidays. As a kid, I loved anything chocolate-mint flavored, and my mom's recipe for Créme de Menthe cake is still one of my favorites! The cake is a simple one to make, and can be made ahead if you plan to serve it to guests. The pretty mint color is festive, and looks lovely with a garnish of chocolate curls or an Andes Mint halved and placed in the center of each piece. I hope you enjoy it as much as my family does!

Créme de Menthe Cake
1-18.5 oz. package regular white cake mix; NOT the pudding type
2 egg whites
1 cup + 3 tablespoons water
1/4 cup créme de menthe liqueur, divided
1-16 oz. can chocolate fudge topping
1-8 oz. carton frozen whipped topping, thawed
Combine cake mix, egg whites, water, and 3 tablespoons créme de menthe. Beat 2 minutes at highest speed of mixer. Reduce speed to low; beat for one minute. Pour batter into greased and floured 9" x 13" pan. Bake at 350 for 25 minutes or until done. Let cool completely in pan.
Spread fudge topping over cooled cake. Combine whipped topping with remaining 2 tablespoons créme de menthe; mix well and spread over fudge topping (if you like a more vibrant green color, add 1-2 drops of green food coloring). Cover and chill at least 2 hours before serving. Cut in to squares and serve with a garnish of chocolate curls, mint leaves or an Andes Mint.
